Does it rebuild tables into columns?+

No. Each line of text on a page goes into a single cell, so table rows land in one cell rather than separate columns. Use Excel's Text to Columns (or Power Query) to split them afterwards.

How is the workbook organized?+

You get a Summary sheet with line and character counts per page, then one sheet per PDF page with each text line in its own row.

Does it work on scanned PDFs?+

Only if the PDF has a text layer. For scanned pages, run OCR PDF first so there is text to export.
